Which ingredients to use? 250 g dark brown sugar, 3 tbs maple syrup, 120 ml soya milk, 100 ml coconut oil, 2 tbs ground almonds, 1 tbs unsweetened cocoa powder, 1 tsp salt, 200 g cream flour, 1 tsp baking powder, ½ tsp bicarbonate of soda; 40 g dark chocolate and a handful of dried fuit.

The recipe makes approximately 25 pieces.


The steps of preparation. Use a large bowl to mix the brown sugar, maple syrup and soya milk; stir and add the coconut oil, melted on the moderate fire. Use the mixer to combine it with the following ingredients: ground almonds, cocoa powder and salt. Sift the flour, altogether with the baking powder and soda, to get a creamy texture. Chop the chocolate, add the dried fruit and stir with a spoon. Cover it with the cling film and leave in the fridge for 30 minutes.

Use a larger tray and cover it with the baking paper. Take a spoon as a measurement for one cookie. Place three of them in a row (3 x 5), making sure that there is enough space in between because they will grow; the shape is not important as they will turn out perfectly round whilst being baked. Bake up to 13 minutes in the previously preheated oven on 180°C.

After taken out, make sure they get cold properly before serving. Additionally sprinkle them with the ground sugar, prepare the tea, pick up some Autumn riches and the feast may begin!
