What ingredients to use? 4 eggs, 220 g caster sugar, 1 tablespoon vanilla extract, ½ tsp salt, 2 tablespoons unsweetened cocoa powder, 100 g dark chocolate, 1 dcl olive oil, 1oo g cream flour, ½ tsp baking powder & 125 g blueberries (1 pack).

To decorate: 125 g raspberries (1 pack), icing sugar to sprinkle.

I am verry happy to share this recipe with you! If you decide to make it – you will not regret it! The cake itself is very deliciuos and it makes a great combination with the berries I like the most. The only ‘downside’ of it could be that it has to rest in the fridge for a couple of hours – so I suggest you to leave it there overnight.

How to prepare it? Use a mixer to mix the eggs and the sugar. The rest of the ingredients should be added gradually. Start with the vanilla extract, salt, cocoa powder, melt the dark chocolate with a bit of olive oil and add approx. 80% of it and the rest keep for later. Mix in the olive oil and flour with the baking powder.

Use the round cake mould and the baking paper for the bottom and, if not using the mould with the removable bottom, cover the side of it with oil and a bit of flour. Place the mixture in it and the blueberries that go on the top of it, pressing each of them halfway down – and cover them with the rest of melted chocolate. Bake it in the previously preheated oven on 180°C for 20 minutes. After taken out, leave it to get cold and let it stay in the fridge overnight. Before serving, decorate it with the pack of raspberries and sprinkle the whole cake with the icing sugar. It is so delicious!
