These cookies are made in the simplest way and they can save that morning when is time to have a coffee/tea, but no any biscuits or cookies are left in the house.
Ingredients: 125 g butter, 150 g white sugar, 2 eggs, 70 g coconut flakes, 300 g plain flour, a pinch of baking soda.

In a big bowl place butter (softened to the room temperature), sugar, eggs, coconut flakes and half the amount of flour. Use the hands to mix them very well and add the rest of flour and a pinch of baking soda. After the dough is well-made, separate it in two pieces (the whole amount will make two baking sheets of cookies), take one out and roll it out on the table dusted with flour. Use any of the shapes. Cover the baking sheets with the baking paper and place the cookies to bake in the previously preheated oven on 180°C for 11-13 minutes.
After the cookies are baked, keep them on the baking sheet if decorating: melt 2 rows of dark chocolate with 5 spoons of milk and sprinkle with it. Sooo delicious!
Yes, looks like the perfect cookie to accompany a cup of tea! ☕️

And they’re so easily done! Trust me, I am such a lover of these moments – a cup of tea, a couple of cookies and some time to be alone.
