Ingredients: 2 egg whites, 130 g white sugar, 2oo ml soya milk, 60 g coconut flakes, 50 ml honey, 90 g coconut oil, 150 g plain flour and 1/2 tsp baking soda.
To decorate: 20 g dark chocolate, 1 tablespoon coconut oil, almond flakes or ground almonds.
How to prepare?
Place egg whites and wite sugar in a big bowl and use the egg beater to mix them. Afterwards melt the coconut oil and leave it for a couple of moments not to be very hot to mix. Add soya milk, coconut flakes and honey to make a cream. The coconut oil comes next. Finish the whole base adding flour and baking soda. Use a round cake mold to place the mass and bake it 25 to 30 minutes in an earlier preheated oven on 180°C.
After the cake is baked, leave it for an hour to get cold. Take it out and place it on a plate. Melt the dark chocolate with the coconut oil and add it on the very top. Use almond flakes of ground almonds for the final touch.
